Dawn Olson-Wallerus, owner of Sugar and Spice Sweetery, began her cake-making business from home in 2017, preparing and selling baked goods to friends and family. Her goodies weren’t born out of boxed cake mixes or from the standard chocolate chip cookie recipe. Rather the creations blended fresh ingredients and ideas to bring Olson-Wallerus’ spin on sweets.
After attending pastry school, paired with on-the-job experience in various baking jobs until 2016, Olson-Wallerus’ creativity and devotion to her craft led to the February 2020 opening of Maple Grove’s Sugar and Spice Sweetery’s storefront in partnership with Ally Restaurants (Rock Elm Tavern and Holman’s Table). Due to the effects of COVID-19, the retail portion of the business closed at the end of June. Like many other business owners, Olson-Wallerus had to pivot, and she’s set her focus on custom orders.
While gatherings are taking on different shapes and sizes, they don’t have to forgo the sweetness when it comes to celebratory confections. Sugar and Spice’s lineup of cake, filling and buttercream frosting flavors is enough to make any cake lover go weak in the knees. From A (almond) to W (white chocolate), there’s a sweet combo for any occasion. Customers won’t taste unnatural extracts or shortening in any of the baked goods. “If you can take out other commercially-produced ingredients,” Olson-Wallerus says, “the flavor is much better, and it’s healthier for you.”
